Masala chai is a flavoured tea beverage made by brewing black tea with a mixture of aromatic Indian spices and herbs. Originating in South Asia, the beverage has gained worldwide popularity.
This was the first thing which I learned to cook. It’s heaven to have a chai in cold or monsoon season. In India it is often served with pakoras, onion bajijs during monsoon. You can also have it with biscuits or namkeen.
Duration:- 10-15 mins

- 4 tea bags or 2tbsp loose tea leaves
- 3-4 green cardamom
- 1 inch ginger, peeled and crushed
- 1-2 cloves

In a small sauce pan add the water and bring it to a boil.
When it boils add all the spices which are cardamom, ginger, cloves, cinnamon stick and reduce the heat. Let it simmer for few minutes until the mixture is fragrant.
After that add the tea bags and let it cook on a medium heat for 2-3 mins.
Add the milk and again cook it for few minutes.
At last add sugar or honey and switch off the heat. Cover it and let it sit for 2 mins.
Pour into a cup through a fine mesh sieve. Discard the leaves and spices.
Your delicious indian masala chai is ready!
Note:- If you don’t have all the spices which are mentioned above, you can use 1-2 spices also. Some people add star anise also to give it an unique flavor. You can experiment with different combination of spices.
