Punjabi Wadi Pulao (Rice with ground lentils dumplings)


Punjabi wadi or wadiyan are spiced & sun dried dumplings made from ground lentils. These are the speciality of north india. They are vegan as well as gluten free. They can be added to rice, curries or veggies. In india they are usually made at home and then sun dried. Wadi’s can be made with moong dal(skinned moong beans) , urad dal (skinned black gram). When i was a child i used to love aloo wadi curry and lauki wadi curry. You can see the pic of wadi below. These dumplings can be bought in any indian grocery store.


Punjabi Wadi Pulao

Serves 3-4


1.5 cups rice

1-2 wadi, broken into small pieces

1 tsp cumin seeds

1 bay leaf

1 black cardamom

1/2 inch cinnamon stick

1/2 cup paneer (cottage cheese)

1/2 cup mix vegetables

1/2 tsp chilli powder

1 tbsp oil

salt to taste

1.5 – 2 cup water(if cooking in pressure cooker)

3.5 cups water(if cooking in a pan)


Heat oil in a pan and fry broken wadis till golden brown.

Add cumin seeds, bay leaf, black cardamom and cinnamon stick. saute for 1-2 mins.

Add paneer pieces,saute for 1-2 mins.

Add some mix veggies.


Now add rice and water. season with salt and chilli powder.

Pressure cook rice for 1 whistle and switch off the heat.


Allow the steam to escape on its own. Fluff the rice and serve it with yogurt or raita.

You can garnish it with coriander leaves.

Note- You can also add sliced onion and garlic after adding cumin seeds.
