Lauki Kofta Curry (Bottle Gourd Dumplings Curry)

Lauki Kofta(bottle gourd) curry is a delicious & healthy indian curry which is less known to people. It compromises of two things, first- dumplings are made of bottle gourd, chickpea flour and some spices, second- yogurt based tomato-onion gravy. These two mixed together makes an awesome curry. The lauki kofta(bottle gourd dumplings) can be enjoyed on their own as appetizers or make a curry dish as main meal.

Lauki Kofta Curry

Ingredients

1 bottle gourd/ lauki/ dhoodi, peeled and grated

salt to taste

4-5 tablespoon chickpea flour/ besan

1/2 teaspoon chilli powder

1 teaspoon coriander powder

1/2 teaspoon mango powder/ amchur

pinch of dried coriander leaves(you can use fresh coriander leaves as well)

1/2 teaspoon cumin powder

For Gravy

3 tablespoon oil

1 onion

3 tomatoes

3/4 teaspoon turmeric powder

1/2 teaspoon chilli powder

1 teaspoon coriander powder

2 tablespoon yogurt/ curd

1 teaspoon cumin seeds

salt to taste

coriander for garnishing

Method 

For the koftas, peel and grate the bottle gourd. Squeeze to remove excess water. Reserve water for the use in curry. Add the salt, chickpea flour, red chilli powder,coriander powder,mango powder,cumin powder, coriander leaves and mix well. Divide the mixture into twelve equal portions.

 Heat sufficient oil in a shallow pan and deep-fry the koftas, in small batches, for two to three minutes, or until golden brown and crisp on the outside. Drain on absorbent paper and set aside.

Heat oil in a pan. Add cumin seeds. Blend onion and tomatoes in a blender. Add this paste in the pan. Saute for few mins. Now add all the spices along with beaten yogurt. Keep on stirring or the yogurt will curdle.

Add 2 cups water and bring to boil, add salt and let it cook for few mins on low heat. Add some coriander to the gravy. Just before serving add the Kofta’s to the curry & bring it to a quick boil so that the gravy gets absorbed into the Kofta’s.

Don’t mix the Kofta’s with the gravy for a long time as they will turn soggy & start breaking. Garnish with some coriander and serve with chapati, rice.
