Vermicelli is an easy dish to make and can be eaten in breakfast. I still love eating them. You can add vegetables to make it more healthy.
2 cups roasted vermicelli (if they are not roasted, roast them in some ghee)
1 onion chopped
1/2 cup mix vegetables, boiled
few curry leaves
1 dry red chilli
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 tablespoon peanuts and cashew nuts
1 teaspoon chilli powder
1/2 teaspoon turmeric
1/2 teaspoon chaat masala
1/2 teaspoon coriander powder
pinch of white pepper
dash of lemon juice
1 tablespoon ketchup and tomato puree
salt to taste
3 cups water
coriander for garnishing
Heat ghee in a pan, roast vermicelli until light brown. Remove it on to a plate. In the same ghee roast peanuts and cashew nuts, add cumin seeds, mustard seeds, dry red chilli and curry leaves. Saute for 1 min.
Add chopped onions, saute for 2mins. Now add some veggies and all the spices. Cook for 1 min. Add water and let it come to a boil. Now we will add our roasted vermicelli. Add lemon juice.
Keep the heat to simmer and let it cook covered till the water is absorbed.Add in the chopped coriander and turn off the heat and let it stand for 10 min covered.
