Palak kadhi is an unusual healthy recipe. Kadhi is a north indian dish and is usually served with rice.Its a great combination of spinach, chickpea flour and sour yogurt.This recipe was told to me by one of my friend.
250 grams spinach/palak,chopped
2 cups sour yogurt,whisked
3 tablespoon chickpea flour
½ teaspoon fenugreek seeds
½ teaspoon cumin seeds
2 dry red chilli
2 green chilli
1 teaspoon ginger-garlic paste
salt to taste
1 teaspoon turmeric
½ teaspoon coriander powder
½ teaspoon chilli powder
few curry leaves
1 teaspoon kasuri methi
2 teaspoon ghee/clarified butter
Whisk together yogurt, chickpea flour and 2 cups of water to make a smooth mixture. Heat oil in a non-stick pan, add cumin seeds, fenugreek seeds, curry leaves, red and green chilli. Saute for 1 min, add onion,cook for 2 mins. Now add ginger-garlic paste. Add turmeric, coriander and red chilli powder.
Add yogurt mixture and bring to boil. Add salt and simmer for 20 mins or till kadhi thickens. Add chopped spinach,cook for few mins.
Heat some ghee in a pan/tadka pan,add red chilli powder, it will start to bubble up. Pour this mixture over the prepared kadhi. Roast some kasuri methi and powder it with hands. Add it to the kadhi.
Serve hot with rice.
