Aloo Baigan (Eggplant & Potato dish)


Aloo baigan is a simple and yummy dish. It is a spicy dish and can be given in lunch boxes with a chapati. I love this combination of eggplant and potatoes.


Aloo Baigan

Serves 2


5 small eggplant,sliced

1 small potato,sliced

1/2 teaspoon fenugreek seeds

1 onion,chopped

1 large tomato,chopped

1/2 teaspoon red chilli powder

1 tablespoon coriander powder

2 tablespoon oil

salt to taste

coriander for garnishing


Heat oil in a pan, add fenugreek seeds. When they change  colour,add chopped onions, saute till light brown.

Add tomatoes and cook till they are soft.


Add red chilli powder, coriander powder and salt. Mix well.

Now add potatoes,cook for few mins.


Add eggplant pieces and cook till they are soft. add a splash of water if the mixture is too dry.


Garnish with coriander. Serve hot with chapati.
