Vegetable sandwich is a healthy dish filled with cheese, paneer, tomato, cucumber, capsicum, lettuce and many more things. Its like a compact package filled with nutrients. It can be served as a breakfast or you can have it just as a snack.

Grilled Vegetable Sandwich

Serve 4

Ingredients

8 slices of Brown/White Bread

1/2 cucumber cut into round slices

1 onion cut into round slices

1 tomato cut into round slices

1/2 capsicum cut into strips

pinch of salt and black pepper to taste

cheese/cheese slice (optional)

100 gms paneer cut into slices

100 gms boiled potato,mashed

3 tablespoon Coriander chutney (Click here for recipe)

3 tablespoon tomato ketchup

Method

Apply coriander chutney on 4 slices of bread. Arrange potato, paneer, onion, cucumber, tomato, capsicum slices on 4 bread slices. Sprinkle some salt and pepper. Top it up with cheese.

Apply tomato ketchup on the remaining slices of bread. Place these slices over the cheese with the tomato ketchup side facing down.

Press slightly and place them on a hot grill.

Grill them till they are golden brown on each side.

Serve hot.
