Khichdi is a very popular and healthy recipe made by rice, lentils and some spices. Khichdi is a comforting food and can be eaten as lunch or dinner. It is a quick recipe to make when you don’t have much time to prepare food. Khichdi can be prepared with moong dal, arhar dal, chana dal, masoor dal. It can be eaten with some yogurt, pickle or papad with a spoonful of ghee on top.
1/2 cup rice
1 cup green gram/hari moong dal
1/2 cup mix veggies
1 tablespoon ghee
1/2 tsp cumin seeds
1 dry red chilli
1 bay leaf
1 black cardamom
1/2 inch cinnamon stick
salt to taste
1 tsp coriander powder
1/2 tsp turmeric
1/4 tsp garam masala
3 cup water
pinch of hing/asafoetida
Heat oil in a pan, i used my pressure cooker. Add cumin seeds, cloves, bay leaf, dry red chilli,hing and black cardamom.
Saute for 1 min. Add some veggies and rice.
Now add all the spices and mix well with rice. Add water and salt,bring it to boil. Close the pressure cooker and cook for 1 whistle.
Allow the steam to escape on its own.
Serve hot with some ghee on top. Enjoy it with yogurt, pickle or papad.
