Mix-Veg Poriyal (Vegetable Stir fry with coconut)

Mix Vegetable poriyal is a mix of all vegetables cooked and tossed with freshly grated coconut. This recipe is very popular in South India. It’s a must dish in South Indian weddings. It goes well with rice as a side dish and also with any type of chapati,parathas. The fresh coconut gives a sweet flavour to the dish.

Mix Veg Poriyal

Ingredients

2 cup mix vegetables, boiled (you can take any vegetable of your choice)

1 tbsp oil

1 tsp mustard seeds

1 tsp cumin seeds

1 green chilli chopped

few curry leaves

pinch of asafoetida

1 onion,chopped

1 tbsp chana dal/split bengal gram

1 tsp urad dal

1 tsp turmeric

1 dry red chilli

salt to taste

1/2 cup freshly grated coconut

Method

Heat oil in a pan. Add mustard and cumin seeds. Allow them to splutter.

Add dry red chilli and chana dal,saute till it’s light brown.

Now add urad dal,saute for a min.

Add turmeric and chopped onion along with curry leaves, green chilli, asafoetida and salt.

Saute them for a min. Don’t brown the onions as we want some crunch in them.

Now add boiled vegetables,stir well.

Add freshly grated coconut,stir well and serve hot with chapati or rice.
