Christmas is just around the corner, market is full of christmas goodies and its very hard to resist them. This year me and my hubby are going to iceland to visit my in-laws, so it would be a white christmas and a new year for us. Hope you all will have a lovely christmas and new year.
These walnut and cornflakes cookies are very easy to make and can be given as a christmas gift to your loved ones and guests. They will simply love it. I ate 3 cookies as soon as they came out of the oven 😉
Walnut and cornflakes cookies
1/2 cup crushed cornflakes
1/2 cup walnuts (i added some pumpkin seeds as well)
1/2 cup dry shredded coconut
1/2 cup sugar (i used 50:50 proportion of brown sugar & white sugar)
1 egg white of large egg
Pre heat oven to 180 degree Celsius. Separate white from the egg yolk.
Take egg white in a bowl and whisk it till it becomes frothy.
Add sugar and beat until it gets well incorporated into the white.
Now add crushed cornflakes, walnuts and coconut one by one. Fold them into the mixture. Don’t over mix them.
Line a baking tray with grease proof paper and place a spoonful of batter on it.
Bake for 14 mins. Allow them to rest for 5 mins. At this point you can half dip them in melted chocolate and allow them to rest. With time the chocolate will become hard.
Cool them down on a rack for 15 mins.
Eat right away or store in an air tight container.
