Sooji Dhokla (Steamed Semolina cake)

Dhokla is a popular gujarati steamed snack. It is usually made with gram flour. This dhokla is made by sooji or semolina. Dhokla is a healthy snack which can be eaten as a breakfast or with a hot cup of tea. You can add chopped veggies to it. Serve this snack with a mint-coriander chutney.

Sooji Dhokla


1 cup semolina/sooji

1 cup yogurt

1-2 tsp ginger-green chilli paste

2 tsp lemon juice

1/4 cup grated carrot

1 tbsp gram flour/besan

salt to taste

pinch of turmeric

1/2 tsp sugar

1/2 cup water

2 tsp eno fruit salt

For seasoning

1 tsp oil

1/2 tsp mustard seeds

pinch of asafoetida

2-3 tbsp water

Final seasoning

1 tsp oil

1 tsp mustard seeds

1 tsp sesame seeds

few curry leaves

some freshly grated coconut

2 tbsp water


In a bowl mix semolina and yogurt. Add grated carrot, ginger-green chilli paste, lemon juice, salt, sugar, turmeric, gram flour and some water.

Make it into a smooth and thick batter.

Keep aside for 45 mins.

After 45 mins. Heat oil in a pan. Add mustard seeds, when they splutter add asafoetida. Add water.

Now add this to the batter and mix well.

Grease a 7 inch pan. Get the steamer ready, let the water boil. Add eno fruit salt to the batter. Gently mix it but don’t over mix otherwise the gas will escape.

Transfer the batter into the grease plate.

Steam for 15 mins. Let it cool, transfer onto plate.

Heat oil in a pan. Add mustard seeds, when they splutter add sesame seeds and curry leaves. Add water and pour this seasoning over the dhokla.

Garnish with coriander and freshly grated coconut.

Serve with mint-coriander chutney.
