Baingan Bhaja is a bengali dish and it is prepared in many different ways. You can have them as a snack or eat them as a side dish. They are simple to make and tastes delicious. Use of mustard oil for frying gives an unique flavour to the dish but you can also use vegetable or sunflower oil.
I used rice flour to coat the brinjal slices as it gives a crispness to the slices. But you can also use gram flour instead of rice flour.
1 large eggplant/ brinjal/ aubergine cut into half an inch round slices
1 tsp chilli powder
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp mango powder/amchur
1/2 tsp garam masala
rice flour as required
mustard oil or sunflower oil for frying
salt to taste
Soak aubergine slices in salted water for 20 mins. Remove and pat dry them with kitchen towel.
Take all slices in a bowl and add all the spice powder with some salt. Let it marinate for 10 mins.
Heat oil in a pan. Take rice flour on a plate and coat each slice with it. Dust off the extra flour.
Pan fry them till they become crisp and golden brown on each side.
Drain them on a kitchen towel.
Serve hot with yogurt or some naan and roti.
