Lemon rice is a yummy and delicious south indian dish which you can easily put together when you are in a hurry. I like lemon rice a lot. It’s one of the most popular dishes from south india. Serve this with raita or yogurt accompanied by poppadoms. You can also use leftover rice to make this.
2 cups cooked rice or leftover rice
1 tbsp oil
1 small onion,sliced
1-2 dry red chilli
1 tbsp peanuts, roasted
4-5 cashew nuts, roasted
1 tsp turmeric powder
1 tsp mustard seeds
few curry leaves
juice of two lemon
salt to taste
Heat the oil in a pan, add mustard seeds, curry leaves and dry red chilli. Fry till the spluttering stops and add the onions.
Saute for a min, they should become translucent. Add cashew nuts and peanuts. Fry for another minute.
Now add turmeric powder and turn off the heat. Add the lemon juice and mix well.
Add the rice and salt to taste. Mix well.
Serve with a Raita and Poppadoms.
