This yummy dish was invented when I ran out of spinach and wanted to eat curry with paneer. I am so glad that i made this, it turned out more yummy than palak paneer. I often make dry kale dish at home with some curry to go with. But now I will always make this instead of dry dish.
kale is a healthy vegetable and is full of iron and anti oxidants and is really good for vegetarian people. This dish is easy to make, its quite similar to palak paneer.
1 tbsp oil
1 onion, roughly chopped
4 cloves garlic, chopped (optional)
1 large bunch kale, de-stemmed and roughly chopped (cook according to packet instructions)
1/2-1 cup spinach (i used few cubes of frozen spinach)
1 tsp. cumin seeds
1 bay leaf
1/2 inch ginger, chopped
1 medium/large tomato, roughly chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp red chilli powder
salt to taste
½ tsp. garam masala
1 inch cinnamon stick
1 cup paneer, cubed
1 tbsp yogurt
1/2 tbsp besan/ chickpea flour
1 tbsp cream (optional)
1 green chilli
Take cooked kale, spinach, garlic, ginger and green chilli in a blender and blend until smooth.
Heat oil in a pan, add bay leaf, cinnamon stick, saute for a min.
Add cumin seeds, saute for a min. add chopped onions, cook till they become light brown in colour.
Now add tomatoes, cook till the mixture starts leaving oil. Add coriander, cumin, red chilli powder and garam masala, saute for 1 -2 mins.
Add kale mixture along with salt. Cook on low heat for 10-15mins. If the mixture is too thick you can add some water to it.
Now add paneer cubes, cook for a min or two.
In a bowl mix yogurt and chickpea flour, add this to the cooked mixture. Cook for a min. Add cream and switch off the heat.
Serve hot with rice, chapati, paratha or naan.
