Flourless Almond & chocolate cake with coconut (Gluten-free)

This is an amazing small cake which is so moist and trust me it has the best flavour. By making it flourless it becomes more healthy and gluten free. By replacing sugar with honey also gives a good taste and is much healthy for the body as well. I didn’t had vanilla essence so i added green cardamon powder and i was amazed it gave such a wonderful taste. This cake was finished in one day. I ate most the cake 😉 i couldn’t resist it.

Flourless almond & chocolate cake

1 1/2 cup almond meal
1/4 cup honey or acc to taste
3/4 cup desiccated coconut
3 eggs
1 tbsp cocoa powder
1 tsp green cardamon powder/ elachi powder
pinch of baking powder
upto 1/4 cup ghee/ clarified butter
2 tablespoons flaked almonds
icing sugar for dusting(optional)

Preheat oven to 180°C. Lightly grease two 5 inch  springform pan. Line base with baking paper.
In a bowl, combine almond meal, cocoa powder and coconut.
In a small bowl, whisk together the eggs and cardamon powder. Gradually add melted ghee, whisking until combined.
Now add honey, mix well.
Add this mixture to almond mixture, stirring until smooth.
Spoon into prepared pan, smoothing the top. Sprinkle with flaked almonds.
Bake for 15-20 minutes or until the top of the cake springs back when touched.
Insert a toothpick in the middle of the cake and make sure it comes out clean. Let it cool for at least 30 minutes before removing from the pan.
Serve with cream or tea.
